What’s for Dinner? Soup!

Erica here, and perhaps this is just my pregnancy hormones speaking, but the weather seems unseasonably warm for March. Don’t get me wrong–normally I’d be singing the praises of any weather that can elevate the temperature of my glacial blood to even lukewarm, but I’m not yet ready to say goodbye to autumn dishes, namely soups, which happen to be one of my favorite foods to prepare and eat. They are simple and and fool-proof, even for someone who is a novice in the kitchen, and if you make a big enough batch, you can binge on it for a week! So before spring turns to summer, and we’re all too sweltering for a hot bowl of soup, here are five of my favorite vegetarian (and some vegan) soup recipes from around the web:

  1. 10-Spice Vegetable Soup from Oh She Glows

You might not be vegan, and you might be skeptical, but this woman is an alchemist in the kitchen, transforming beans, legumes, vegetables, and an assortment of other kitchen staples into edible gold. 2. Kale & Potato Soup from Tom Philpott at Mother Jones

Who doesn’t like potato leek soup: the heartiness, the creaminess, the way it fills your belly like you’re a bear about to hibernate for winter? This version nixes the actual cream, uses the almighty potato as the velvety base, and tosses in the superfood kale for good measure. Do not skip the lemon at the end! 3. Best Lentil Soup from Cookie & Kate

This vegetarian website is another winner, and this particular recipe is soup-er flavorful and nutritious. 4. Broccoli, Lemon, & Parmesan Soup from Merrill Stubbs at Food52

This recipe proves that simple ingredients, thoughtfully prepared can make the most delicious dishes. 5. Vegetable & Bean Soup with Pesto from Rachael Ray

You gotta love Rachael Ray. She is an adorable sweetheart, loves animals, and kicks ass in the kitchen. While she only occasionally creates vegetarian recipes, she definitely packs in a flavor punch when she does. This recipe adds pesto to the soup pot.
